Turkey Rolls Casserole
1 box stove top stuffing
1 pkg sliced turkey (lunch meat)
1 can cream of chicken
1 cup milk
Prepare stuffing according to directions on package. Place small amount of
stuffing on piece of meat roll up and place in dish. Mix soup and milk- pour over the meat rolls
Bake at 350 degrees until warmed through. (can use different kinds of lunch meat)

Sausage Bake
5 med potatoes cut chunky
1 lg onion cut chunky
3 carrots sliced thick
1 can mushrooms drained
4 TBSP melted butter
1 tsp salt
1 tsp garlic powder
1/2 tsp dried thyme
1/2 tsp black pepper
1 lb cooked chicken, turkey, beef, or pork sausage cut into 1/4 inch slices

Combine all ingredients except sausage in a large bowl. Mix until evenly coated.
Pour into a 9x13 pan sprayed with nonstick cooking spray.
Bake for 30 min uncovered
add sausage and bake an additional 15 to 20 minutes uncovered.

Peanut Butter Bars
1 cup butter melted
2 cups graham cracker crumbs
2 cups powdered sugar
1 c peanut butter
1 1/2 c chocolate chips
4 TBS peanut butter
in medium bowl, mix all ingredients until well blended press evenly into the bottom
of an ungreased 9x13 pan

melt chocolate chips with the peanut butter (I uses the microwave) Stirring until
smooth. Spread over mixture refrigerate for at least one hour before cutting into squares.

Easy Family Night Meal

Meatball Muffins

These muffins will surprise everyone! Great Italian taste, simple to make!

Prep Time: 20 min
Bake Time: 25 min
Skill Level: Beginning
Servings: 12

  • 12 Rhodes Dinner Rolls, thawed to room temperature
  • 1/4 cup marinara sauce
  • 12 frozen cooked Italian style meatballs
  • 3 sticks mozzarella string cheese, cut in fourths
  • 2 tablespoons butter, melted
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • extra marinara sauce, if desired

Instructions
Spray counter lightly with non-stick cooking spray. Flatten each roll into a 5-inch circle. Place 1 teaspoon marinara sauce in the center of each circle. Top with 1 meatball and a piece of string cheese cut in half. Place a piece of cheese on two sides of the meatball. Pull dough up around filling to completely enclose and pinch to seal. Place one seam side down in each cup of a sprayed 12 cup muffin tin. Brush each one with butter and sprinkle with Parmesan cheese and Italian seasoning. Cover with sprayed plastic wrap and let rise 30-45 minutes. Remove wrap and bake at 350F 20-25 minutes. Serve warm with warm marinara sauce, if desired.
